Chicken, tomato & Basil Pasta (Serves 4) Cals 480pp – BBC Good Food

I tried this yummy pasta dish for lunch, I split the chicken mix and refrigerated half to mix with the pasta and garnishes another day.

Chicken, tomato and basil pasta

I served with some fresh rocket

Ingredients
280g whole wheat Pasta
1 medium onion, diced (180g)
3 tomatoes, deseeded and diced (300g)
2 chicken breasts (300g)
150ml chicken stock
4 tbsp chopped basil
1 tsp balsamic vinegar
4 tbsp parmesan
4 rashers of smoked streaky bacon grilled (80g)

Method
1. Preheat the oven to 200C, trim your chicken breast add a little seasoning of your choice and place in a small roasting tin and cover tightly. Cook in the oven for around 20 minutes until cooked through (This will depend on the size of your fillets) Once cooked chop into bite size pieces

2. Meanwhile Cook the pasta as per packet instructions and drain well. If making in advance rinse with cold water to prevent sticking

3. Add the onion to a non stick pan with a little water and soften. Add the garlic and tomatoes and fry for 1 minute. Add the chicken, stock and balsamic and mix well

4. Next mix with pasta and add the bacon and basil before topping each portion with Parmesan. Alternately leave to cool before refrigerating, ensure you heat thoroughly when the time comes and add the basil and cheese after this point
