Turkey and courgette koftas (Serves 4) Cals 250pp – BBC Good Food

I don’t cook turkey often and it’s always a bit of a worry with having enough flavour and not being too dry. Well you needn’t worry with these flavoursome koftas!

Ingredients
500g turkey leg mince
2 garlic cloves
2tsp ground cumin
1 lemon, zest and juice
140g courgette, coarsely grated
Parsley, chopped
Mint, chopped
150g fat-free Greek yoghurt
200g cucumber, halved length ways and chopped
100g carrot, grated
140g cherry tomatoes

Method
1. Mix the mince, courgette, garlic, lemon zest, a handful of chopped parsley and mint well in a large bowl. Divide into 8 and roll into sausage shapes. Skewer onto metal sticks or wooden (ensure these are soaked in water first)

2. Heat the grill to a medium to high heat and grill the koftas for about 15 minutes turning regularly until browned and cooked through.

3. Whilst cooking mix your salad of carrot, cucumber, tomatoes and half the lemon juice. Mix the yoghurt with the remaining mint, lemon juice and season well. Divide between plates with the koftas.

Serve together with rice, tortilla wraps or both!

I served with rice for dinner and had left overs for lunch with weight watcher tortilla wraps and a boiled egg. Nom! X
