This is a super simple recipe that is big on taste. On this occasion I used shop bought pesto for convenience but would be extra special with homemade!
Ingredients
2 salmon fillets with skin on (about 120g each)
150g green beans chopped at the hard stem end
2tbsp pesto, about 30g
Lemon juice to serve
Method
1. Preheat your oven to 190C. Bring a pan of water to boil, add the green beans and cook for 3 minutes.
2. Meanwhile you need 2 pieces of tin foil each about an arm’s length long. Fold each piece in half, when the beans are done drain them and split between each sheet of tin foil stacked in the middle.
3. Place a piece of salmon on each stack and top again with half of the pesto on each. Now securely seal your salmon parcel place on a baking tray and cook for about 20-25 minutes until cooked through.
Serve with a good squeeze of lemon juice
