Another fav Jamie Oliver recipe from me! Fresh and yummy!
Ingredients
1tsp olive oil
400g chicken breast
1.5tsp dried oregano
1tsp all spice
300g couscous
1 red pepper, halved and deseeded
1 chilli pepper, deseeded and chopped
200g frozen peas, blanched in boiling water
4 spring onions, sliced
200g fat-free natural yoghurt
200g cucumber
40g feta cheese
1 lemon
30g black olives, halved
Fresh dill
Fresh mint leaves, roughly chopped
Method
1. Preheat your oven to 180C and place your pepper skin side up in the oven. Cook for 15-20 minutes. Place your couscous in a bowl with boiling water and cover.
2. Next pop your chicken, oregano, allspice and lemon zest on a large sheet of baking parchment and toss to cover the chicken. Fold over the paper and bash with a rolling-pin until the breast is equal thickness at about 1.5cm.
3. Heat the oil in a non stick pan and add the chicken turning after 4 minutes until cooked through and golden.
4. Meanwhile, coarsely grate the cucumber add a little salt and squeeze out as much liquid as possible, add to the yoghurt with the juice of the lemon and mint leaves. Season and mix well.
5. Chop your roast pepper and mix with the chilli, spring onions, dill and peas. Add this mixture to the couscous and mix well.
6. Plate up your couscous, slice your chicken and add this along with the halved black olives and crumbled feta to the plate. Top with the yoghurt and enjoy!

If this is a little dry for you add a drizzle of extra virgin oil however this isn’t in my workings. Although I think its scrummy without! Nom! X
