A very quick and extremely tasty midweek meal.
Ingredients
1tbsp olive oil
2 tuna steaks (around 140g each)
1tsp dried chilli flakes
.5tsp sea salt
.5tsp ground black pepper
100g whole wheat spaghetti
150g tenderstem broccoli
100g cherry tomatoes
1tsp chilli oil
1 lemon
Fresh parsley
Method
1. Add your spaghetti to boiling water and cook to packet instructions, adding the broccoli for the last 3 minutes before draining.
2. Meanwhile mix the chilli flakes, salt and pepper in a small bowl and run over your tuna steaks. Heat the olive oil in a pan and fry your tuna steaks on each side to your liking. I highly recommend just searing them so they do not dry out. Remove to a warm plate to rest.
3. Add the pasta, broccoli, cherry tomatoes and parsley to the pan and mix together. Add the chilli oil, a squeeze of lemon juice and season.
Divide between 2 plates and top with a tuna steak before serving with a wedge of lemon
