A great way to get extra veggies into your diet!
Ingredients
1tsp olive oil
2 large red peppers, cut into chunks
2 large onions, cut into chunks
1 large leek, cut into chunks
2 carrots, peeled and cut into chunks
2 celery stalks, cut into chunks
2 chilli peppers, chopped
4 garlic cloves, sliced
2 tins chopped tomatoes
1tbsp caster sugar
1tbsp balsamic vinegar
Method
1. Heat the oil in deep pan and add the chopped vegetables but not the peppers cook until softened.
2. Add the peppers and garlic and cook for a further 5 minutes before adding the chopped tomatoes, sugar and vinegar. Mix well bring to a simmer and cook for at least 20 minutes. If you have time leave for longer.
3. Once ready blitz with a hand whisk until smooth. Adjust with seasoning to taste.
Enjoy straight away or freeze in portions. Also yummy with some added basil
