Steak and Stilton Bruschetta (Serves 2) Cals 375pp – BBC Good Food

This is a recipe I tried last night for the first time, mainly for the OH as I’m not a Stilton fan, but I must say I thoroughly enjoyed!

Ingredients
1 steak (I used 225g rib eye)
1 part baked ciabatta roll
1tsp olive oil
1tsp Dijon mustard
1 handful of spinach leaves
40g Stilton
1tsp balsamic vinegar

Method
1. Halve and cook your ciabatta as per packet instructions. Rub your steak with the olive oil and heat a griddle pan.

2. Season the meat on the side you are about to cook first, place into the hot pan and cook to your liking, seasoning the meat on the other side before turning. You want to cook for around 2-3 minutes each side for rare, 3-4 minutes for medium and 5 for well done. This does however depend on your steaks size and thickness so here’s a little test that will help.

3. When your steak is ready place on a plate to rest. Place half a ciabatta on each plate, spread .5tsp of Dijon mustard on each and top with a few spinach leaves. Cut your steak in half and add this next, topped with the crumbled Stilton, any resting juices and half the balsamic on each dish.

I served with some griddled asparagus, garlic mushrooms and sweet tat wedges for OH which I nicked some of
