This is quite an indulgent meal but I really enjoyed it. Must admit my timer switched off so I did over cook a little but will definitely be having again.
Ingredients
2 skinless salmon fillets (About 150g each)
2 leeks, chopped
75g garlic and herb Philadelphia light
4 sheets filo pastry (I used Jusrol)
40g light butter (I used Flora light)
Method
1. Preheat your oven to 200C. Place your leeks in a sauce pan with 3tbsp of water and 10g of butter. Cover and cook for around 10 minutes until tender.
2. When ready remove your leeks from the pan and leave to cool. Meanwhile lay out your first sheet of pastry and brush with some melted butter before layering with the second sheet. Place a salmon fillet in the middle and season, repeat with the second fillet.
3. Once the leeks have cooled mix in your cheese and split the mixture between your two parcels. Now wrap and brush the outsides with the remaining melted butter.
4. Place your parcels on a baking tray, and bake for 25-30 minutes until golden and the salmon cooked through.
Serve with green vegetables or salad

I’m not sure it needs quite as much pastry although would be interested in trying without any pastry at some point too. Nom! X
