I really really love roast vegetables! They are a great accompaniment to many meals and can even be a main part themselves. Below I share my basic recipe but there are so many things you can add or swap!
Ingredients
Courgette
Leek
Red onion
Red pepper
Red chilli
.5tbsp olive oil
Seasoning of your choice
Method
1. Preheat your oven to 200C and start by chopping your veg to your required size. I will generally chop my courgette and leeks about a 1cm thick, quarter my onions and chop my pepper into chunks of around 10 pieces. Your chilli can just be sliced as normal.
2. Mix all ingredients in a roasting tray with your oil and seasoning of your choice. On this occasion I used some paprika and chilli powder.
3. Roast your veg for 10 minutes and remove from the oven to mix. bake for another 10 minutes and mix again. They may need another 5-10 minutes in the oven depending how you well you like them cooked

The options here are endless, I also sometimes mix in a splash of balsamic vinegar, or sprinkle over some feta and use variations on veg, like aubergines, squash, tomatoes etc.
As well as using this as a side dish I do love a good roast veg wrap for lunch, add a little cheese and some hot pepper sauce and wrap in a tortilla! Nom! X
