Crunchy mozzarella salad (Serves 2) Cals 415 – BBC Good Food

I’m still searching for some new salad combo inspiration and this was really tasty.

Ingredients
100g spinach, rocket and watercress bag salad
200g cucumber, cut into ribbons with a veg peeler
1 medium yellow pepper cut into thin slices (160g)
100g sun-dried tomatoes, roughly chopped
125g buffalo mozzarella, sliced
2tsp pumpkin seeds
2tsp balsamic vinegar
1tbsp oil from tomatoes

Method
1. Divide your salad leaves onto each plate with the cucumber and pepper slices

2. Divide the tomatoes and cheese between each portion and drizzle with the oil and vinegar.

3. Lastly sprinkle on the pumpkin seeds

I think this would work well as a reduced portion as a side dish to a Mediterranean chicken dish for instance. Really quick to put together and lovely on a hot summers day. Nom! X
