Lamb and feta skewers (Serves 4) Cals 310pp – BBC Good Food

Lamb and feta go so well together so it’s no surprise that this is a really tasty dish. Easily prepared in advance too which is a bonus.

Ingredients
500g minced lamb
75g feta cheese
1 small red onion (100g)
1tbsp Harissa paste
1 garlic clove, crushed

Method
1. Finely dice your onion, and add with the lamb to a large bowl. Add the Harissa and garlic and mix well with your hands

2. Roughly chop and crumble the feta into the bowl and work through the mince mixture. At this point The mix can be refrigerated or frozen

3. When ready to cook, divide the mix into the amount of skewers you are making. Shape into small sausages and insert your skewers.

4. Heat a non stick pan and carefully lay in the skewers. They will be very delicate so use a spatula when turning after a few minutes at a high heat. Once they are cooked on all sides they should be a lot sturdier.

5. A lot of oil will accumulate in pan, once cooked move to a plate to stand for a few minutes and remove any excess oil with kitchen roll before serving

These were very tasty and juicy! I will try adding some tomatoes or peppers on the skewer next time and would go lovely with some cous cous. Nom! X
