This rice dish is in Jamie’s 15 minute meals alongside the BBQ glazed pork but would work well with many dishes.
1 small red onion (100g)
1 celery stick, trimmed
1 medium red pepper (160g)
.25tsp cumin seeds
.5tsp fennel seeds
120g whole grain rice
Basil leaves to serve
Half a lemon
1. Start to cook your rice as per packet instructions.
2. Roughly chop the onion, celery, okra and red pepper and add to a non stick pan/pot with a little water. Add the paprika, cumin seeds and fennel and stir.
3. Leave to cook for a few minutes, stirring before adding your rice. Give a good mix, season and stir through some basil leaves
Serve with a wedge of lemon per portion
