This veggie side is from one of my fav Jamie Oliver dishes in 30 minute meals. It’s a lovely way to make vegetables more exciting!
Ingredients
125g asparagus, trimmed
125g broccoli, trimmed (I used purple sprouting or you can use frozen about 150g)
.5tsp sesame oil
1 red chilli, deseeded and finely chopped
1 garlic clove, crushed
2tbsp reduced salt soy
Method
1. Cook the vegetables to your liking. For me I bring a large saucepan of water to the boil. Add the broccoli and cook for 2 minutes, add the asparagus and cook for a further 3 minutes. (If using frozen broccoli I add to cold water and bring to the boil at which point I add the asparagus for 3 minutes)
2. Drain your veg and revive a little with a splash of cold water. Add back to the pan and put over a very low heat whilst you add all other ingredients.
3. Mix up as much as you can

I love this as a side, I have with stir fries and Asian flavoured dishes, try adding half and half soy and oyster sauce for a tasty alternative. Nom! X
