This is a yummy weekend breakfast the family will love. Because who doesn’t love pancakes?
Ingredients
200g self raising flour
1tsp baking powder
1 large egg
10g light butter, melted
300ml semi skimmed milk
150g blueberries
Vegetable oil to grease the pan
Method
1. Mix the flour and baking powder. Make a well in the middle and add the egg, butter and a little milk.
2. Whisk ingredients together slowly adding all the milk.
3. Gently stir through the blueberries. Heat a non stick pan to a medium heat and add the oil. Wipe around the pan with some kitchen roll.
4. Spoon in the mixture (should easily make 12 small pancakes) cook until bubbles appear on the top of the pancake and turn over to cook the other side (this side will cook quicker)
Once cooked stack them on a plate
