Thai beef with basil (serves 2) Cals 275pp – Thailand World Kitchen Cookbook

This fakeaway is not only really tasty, it’s high in protein, low in fat and is very quick and simple to cook!

Ingredients
1tbsp vegetable oil
1 lean rump steak, trimmed and sliced (250g)
2 Birdseye chillies, chopped
2 medium shallots, sliced (100g) or onion
1 small pepper, sliced (100g)
.5tbsp fish sauce
1.5tbsp oyster sauce
3 garlic cloves, crushed
2tbsp chicken stock
Pinch of sugar
Large handful of basil, preferably Thai but normal if not available

Method
1. Mix the oyster sauce, fish sauce, stock and sugar. Set aside

2. Heat the oil in a pan and keep at a low heat. Add the garlic, cook for 1 minute

3. Increase the heat and add the beef and chilli. Add the shallots and oyster mix made up earlier and cook until the beef has browned.

4. Stir through most of the basil and leave to stand for a few minutes

Serve with the remaining fresh basil

Very simple stir fry but very flavoursome! OH loves it and I must agree it’s pretty Nom! X
