Nelly’s eggy fried rice (serves 2) Cals 285pp

When you want something a little more than plain rice with a stir fry try this lighter egg fried rice

Ingredients
1tsp sesame oil
100g whole grain rice
1 large free range egg
1tbsp reduced salt soy sauce
.5tsp Chinese five spice
80g frozen peas
3 spring onions, sliced

Method
1. Start by cooking the rice as per packet instruction in a saucepan. Drain well once cooked.

2. Heat half the oil in a non stick wok, crack in the egg and break the yolk mixing it round a little. Cook for a minute or 2 then remove and chop

3. Add the other half of the oil to the pan with the rice, mix in the five spice and then the soy sauce before stirring through the peas and egg. If it looks a little dry add a very small amount of water.

4. Once the peas have softened stir through the spring onion and cook for a further minute

Serve straight away
