Lemon chicken (serves 4) Cals 245 – BBC Good food

This is a simple juicy tasty chicken dish with just 4 ingredients!

Ingredients
4 chicken breasts (650g)
Juice of 1 lemon
1.5 tbsp clear honey (30g)
Fresh thyme

Method
1. Preheat oven to 200C. Place each chicken fillet between 2 layers of cling film and beat with a rolling pin or similar to flatten to the same thickness throughout. Alternatively butterfly each fillet.

2. Mix the lemon juice with honey and thyme leaves in a roasting dish before adding the chicken and covering in the sauce

3. Add a slice of lemon onto each fillet and cover tightly with tin foil before placing it in the oven for 15 minutes.

4. Turn your grill to high and remove the foil from the chicken and baste before placing under the grill for 5-10 minutes to brown and thicken the juices. Baste after 5 minutes and serve when golden

The original recipe to this cooks the chicken solely under the grill however I think the time in the oven makes this extra juicy on the inside.

To use up leftovers here slice the chicken, chop the lemon and add to vegetable couscous with some juices and a dollop of natural yoghurt! Nom!
