Gammon, poached egg, hash browns with fried onions, mushrooms and baked beans (Serves 2) Cals 580pp

This is why I love calorie counting! You do not have to deprive yourself of any foods, you just need to cook it in the correct way and don’t over indulge!

Gammon, poached egg, hash browns

Ingredients
1 gammon rounds (250g) I use smoked
2 large free range eggs
4 frozen hash browns
1 tsp light margarine/butter (I used flora light)
1 small tin of beans (200g)
140g common mushrooms sliced (looks like a lot but they will reduce)
1 small onion sliced (90g)

Method
1. Preheat your oven and cook the hash browns as per the packet instructions. Cut your Gammon round into 2 halves and place under a medium hot grill. Turn after 8 minutes and cook for a further 8 minutes on the other side.

2. Meanwhile melt the butter in a pan and add the onions and mushrooms and cook over a medium heat covered until the mushrooms produce liquid, at thus point uncover and cook until the liquid evaporates whilst your gammon is under the grill. Heat the baked beans in a pan for the last 5 minutes

3. Bring a pan of water to simmering and poach 1 egg at a time (Video below helped me with this!) If you are not confident at poaching soft boil the egg by placing the eggs in boiling water and cooking for 6-7 minutes

4. Serve with condiments of your choice, although I recommend a dollop of mustard!
